An oldie, but a goodie recipe

We found our old recipe book which had some easy and tasty recipes to make. Enjoy some Red Pepper Rice!
Serves 4
1 T olive oil
½ small onion finely diced
1 clove garlic minced fine
1 small red bell pepper diced
1 tsp fresh parsley chopped
Salt and pepper to taste
1 cup cooked instant brown rice
1 ½ T Parmesan cheese
Sautee onion, garlic and bell pepper in olive oil until soft. Mix with prepared rice. Add Parmesan cheese and parsley and fluff with fork.
