Aspect of managing and working in The Niche Market that you are most excited about: I’ve worked at a small store in downtown Boulder for over ten years, the chance to help start a new store is a great opportunity. Then, when you couple that with all the profits going back to Meals on Wheels, it gives me an enthusiasm that I haven’t had at previous jobs.
The Niche Market product you are most excited for: Yerba Mate. It’s the healthiest energy drink you can find. Whether you are working late nights or early mornings, nothing gets me going like a cold Mate.
Favorite Market product: I love the quiches, the Ham & Cheese is amazing. Not only that, but they are big enough to share with my family.
Most unique or special part of the Market: The idea of opening a small store in a part of Boulder which, over the next decade, will be increasingly developed is incredibly forward-thinking.
Product you’d like to see at the Market the most: Ice cream! Pie and ice cream—I mean what is better than that?
Greatest challenge in opening the Market: Building a customer base from the ground up. Often, you start a new job that has already been in business for awhile, so there’s a good chance there is already a following. Getting to the point where you become part of someone’s habits and repertoire will be the greatest challenge.
Most exciting part of The Niche Market’s future: To see how successful the business can become. Boulder is going to continue growing and developing east of downtown. I’m interested to see what Boulder looks like ten years from now.
